80-100ml extra virgin olive oil
2 shallots, sliced
1 bunch fresh basil, roughly torn
4-6 cloves garlic, crushed
4 medium tomatoes, diced
Salt, pepper, smokey paprika
2 serves fresh pasta
Heat oil and cook shallots for 2-3 minutes, then add the garlic and basil and cook for another 2-3 minutes, now add the tomatoes along with salt, pepper and smokey paprika to taste.
Serve with the pasta and enjoy! You can add cheese too if you like.
